How to make game sausage

Making game sausage. One night, I sat down to a nice Caribou steak. The meat was from a Caribou my brother-in-law shot on his latest hunting expedition in Seward, Alaska.

I remember how excited I was watching the Caribou meat cook on the grill.

The steaks were cut pretty thin so I didn’t have to stand outside for too long grilling in the winter cold.

With a baked potato, me and my father sat down to taste this Caribou steak, something we have never tasted before. Besides the steaks, we also had about 20 lbs of caribou ground meat in our freezer.

I took one bite of that steak and I thought,  ”man this meat is gamey”, but like a good solider, I never outwardly complained. But I was automatically thinking what could I do with the 20 lbs of ground caribou meat we had sitting in our freezer.

About half way through our steaks, I said, “Dad, I think we should make sausage out of the ground meat we have.”.  My father agreed.

We are pretty experienced at making sausage out of game meat, although this would be the first time we made Caribou sausage.

How to make game sausage

Besides our recipe for Caribou sausage, which took the gamey taste right out of the meat. We will also share our recipes for making:

  • Venison sausage
  • Bear Sausage

Caribou Sausage Recipe

This sausage recipe will take the gamey taste out of your ground Caribou meat.

You need the following ingredients:

  • Caribou 10 lbs

  • Fresh Pork Butt 3 lbs

  • Ice 2 oz

  • Black Pepper 1 oz

  • Ground Ginger 1/2 oz

  • Nutmeg 1 oz

  • Allspice ½ oz

  • Coriander ½ oz

  • Paprika 1 oz

  • Garlic Powder 2 tsp

  • Salt 10 oz

    First mix all the different meats thoroughly, then add all the different spices. Mix. Use your sausage stuffer to stuff links 5 to 8 inches.

Venison Sausage Recipe

  • Venison 10 lbshow to make game sausage

  • Beef 4 lbs

  • Pork 6 lbs

  • Pepper 8 tsp

  • Ice 5 lbs

  • Garlic Powder 6 tsp

  • Marjoram 5 tsp

  • Mustard Seed 8 tbs

    First mix all the meat together. Add the ice and spices, mix well.

Bear sausage Recipe

Bear sausage needs to be heavily seasoned with garlic, bacon and Allspice.

  • Bear Meat 10 lbsmaking wild game sausage

  • Pork Butt 4 lbs

  • Thick Slab Bacon 1 lb

  • Green Pepper 1 tsp

  • Red Pepper 2 tsp

  • Allspice ½ oz

  • Garlic Salt 5 tsp

  • Black Pepper 3 tsp

    Cut bacon slices into fourths. Mix bear meat, pork and bacon. Add seasonings. Stuff sausage cases as you would normally.
